Looking for healthy breakfast ideas? I made these breakfast burritos in less an hour, and they lasted the whole week (for 2 people). I love good food, and I LOVE switching up breakfast while also keeping it simple and tasty....AND since I used gluten-free tortillas and fresh ingredients, I didn't feel tired or heavy after eating. These are a good option if you need a quick breakfast in the morning.

BTW nothing is exact, so feel free to adjust ingredients & measurements according to your preferences! If you're vegan or dairy free, you can leave out the chicken, eggs and cheese, and swap for more veggies! That's one of the reasons why cooking can be so fun. It's creative and flexible.
What you'll need:
2 sweet potatoes
4 eggs
Spinach - couple of handfuls chopped
1/2 red bell pepper chopped
1/4 red onion chopped
1/4 jalapeño chopped (optional and based on spice preference)
1/2 c leftover cooked chicken (I used leftover rotisserie chicken Luis' mom brought for us - thanks Yolanda!)
Cheese (optional if you are dairy-free) - 1/4 c. or so
Your favorite salsa (I used tomatillo)
Avocado (optional)
Almond Flour Siete Tortillas (or 100% whole grain or gluten free option)
You can freeze them and warm them up when you're ready to eat if you want to keep them for more than 1 week.
